Coffee cake/slice

Ingredients:
200g butter
1 1/4 cups brown sugar
2 teaspoons vanilla essence
4 eggs
2 tablespoons instant coffee
2 tablespoons hot water
1 1/4 cups flour
1 teaspoon baking powder
Melt butter in a saucepan large enough to mix all the ingredients
Stir in brown sugar, vanilla essence and eggs
Beat with a wooden spoon until combined
Dissolve the coffee in the hot water
Mix into the butter mixture
Sift the flour and baking powder into the saucepan and mix to combine
Pour into a greased 20x30 sponge roll tin
Bake at 180degrees C for 25 to 30 minutes or until cake springs back when lightly touched
Cut into squares while still warm
Dust with icing sugar (or coffee icing - yum!!)
